3/4 pound macaroni, egg noodle or other pasta
2 tablespoons olive oil
1-1/4 pounds ground meat---beef, pork or turkey
salt
3 Tablespoons CuisineMentor Hungarian Goulash Gourmet Spice Blend
1 medium onion, finely chopped
1 red bell pepper, seeded and chopped
1 cup chicken or beef broth
One 15-ounce can diced tomato
1 cup sour cream
3 tablespoons chopped fresh dill (optional)
Flat-leaf parsley, finely chopped (a generous handful)
Garnishes:
3 tablespoons freshly snipped chives or green onions
4 radishes, finely chopped
1/2 cup chopped cornichons or baby gherkin pickles
Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain, setting aside a ladle of pasta cooking water.
While the water comes to a boil and pasta cooks, in a large, deep skillet, heat the oil over medium heat. Add the ground meat; season with salt. Cook until browned, stirring and crumbling the meat with a wooden spoon, about 5 minutes. Skim off any fat. Add the spice blend, onion, and bell pepper and cook for 10 minutes. Add the broth and tomatoes, cook another 5 minutes. Stir in the sour cream, dill and parsley.
Add cooked pasta and stir. Let pasta absorb some of the sauce, a minute or so. Adjust salt. Add some pasta cooking water to thin if needed.
Serves 4-5
Serve with small bowls of the chives, radishes and cornichons.
